DEVELOPMENT OF AN INNOVATIVE TECHNOLOGY FOR THE PRODUCTION OF MINI-MELTS WITH REDUCED LIQUID NITROGEN CONSUMPTION AND NEW PRODUCT FORMATS
The aim of the project is to develop and test an innovative Mini Melts ice cream ball production technology in cooperation with SIA “Rūjienas saldējums”, which ensures the production of ice cream balls of uniform size (~10-12 mm diameter) with increased quality stability and reduced liquid nitrogen consumption.
The research project is implemented within the framework of the project No 1.2.1.2.2.i.2/1/24/A/CFLA/002 of Latvian Food Competence Centre Ltd.
